I'm a new farmer of a established orchard, i want them all organic

my question:
1. What can i spray them for better yield an organic spray?
2. What can i spray to stop leaf curl on some of the stone fruit?
3. What can i plant between row's of my orchard which is beneficial to both fruit trees and my plant?
4. My farm is in Marullan NSW which i know good for stone fruits, what vegetables i can plant in that weather?
5.  We are putting a net over the orchard to stop the birds eating the fruits, what sort of vegetables that i can plant under the net?
6. Is turkey manure good for my organic garden?
