Olives harvesting in Victoria

We are white-blue collar couple from Melbourne and we would like to purchase the farm 15ha in Ballarat area.
The farm has app 800 established olive trees + 200 recently planted (app 1000 total).
Spanish types: Correggiolo & Manzanillo.

We would like to get insight the core of the Olive production. Current owner does not have much information about how many kg per year of olives is possible to harvest as he let someone to care for the farm in return to have the right to take all olives.

We estimate 800 trees may deliver app 30 kg each, so it is about 24.000 kg of olives

1) Is anybody experienced in growing olives may provide initial consulting?
2) Is it difficult to sell olives wholesale? We found pricing may vary $1-$3 per kg? How is correct to calculate the total (kg) outcome?
3) We are thinking maybe later to establish a small business and to produce pickled farm-grown organic olives; how to understand demand and is it a good idea at all?
