On farm home butchering

When butchering your own livestock on site for your own meat supply, how do people dispose of the resulting carcass/bones? Are there any web links to Victorian regulations regarding disposal requirements and/or laws?

Gday Hope you use some of the bone to make beef stock after that you can dispose of it in a hole somewhere in a corner of the farm to put nutrition back in the soil
